Perimeter’s Gastronomy series returns with more exciting opportunities for indulgence. Learn about appropriate wine pairings and artisanal delicacies from elite purveyors of culinary know-how. Meet like-minded foodies and apostles of all things organic. And exchange ideas – epicurean and otherwise – in the esteemed Black Hole Bistro, a highly interactive setting where high-minded conversation is the norm. Bistro and cultural events are ancillary activities made possible through paid ticketing, private donors and sponsorships. On February 7, Perimeter’s Black Hole Bistro will team up with Chocolate Barr’s Candies of Stratford, Ontario to teach you how to properly indulge. Together, chocolatier Derek Barr and the Black Hole Bistro’s resident oenophile, Dan Lynch, will lead a tasting sure to appease hopeless chocoholics and seasoned wine connoisseurs alike.
Over the course of the evening, you will be exposed to five pairings of exquisite chocolate and international wines. Learn how the creative process behind single-origin bean-to-bar chocolate lends added complexity and discover how to match these expressive, artisanal delicacies with suitably sweet and dry wines from around the world. F&M Brewery of Guelph, Flying Monkeys of Barrie, Muskoka Brewery of Bracebridge, and Grand River Brewing of Cambridge will be on hand to share their special brews and describe their product’s distinctive quality and character: essentially ‘living’ beer in its natural state. We’re certain that this will pique the interest of any cask connoisseur or beer enthusiast.
Cask Master (and Perimeter Institute physicist) Louis Leblond will be on hand to toast the afternoon and answer your physics/beer questions. And don’t forget to take your BHB beer glass home with you – we don’t want to do all those dishes!
